These are, in essence, steamed dumplings that are pan fried for a bit. This is one of my favorite foods, and it’s one of those foods that is best made by the small, seedy looking places. Guo Tie in fancy restaurants is just never as good. Years ago, upon realizing my fondness for fried dumplings, steamed buns, and other such foods, my mother commented that I must really be my father’s daughter, as my favorite foods all tend to be from Shandong, the province from which my father’s family hails. She is referring to my birth father, whom I have not seen since I was 18 months old, and of whom I have no memories whatsoever. My mother doesn’t have many positive things to say about him, so I don’t take it to be much of a loss, but it is interesting to me to know that not all things can be left behind.
